Tonka bean has become a trend ingredient in recent years, making its way from haute cuisine to home cooking. Its delicate aroma and divine sweetness are reminiscent of a combination of vanilla and amaretto.
The sweet and fragrant flavour of the almond-shaped seeds of the tonka tree, found in the tropical rainforests of South America, is super-versatile – so you won’t just find it in desserts. As well as fillings, creams, desserts and baked goods, the flavour of the tonka bean is a great addition to savoury cooking, such as in game dishes. Many people also enjoy adding a touch of its sophisticated sweetness to their morning coffee!
How do I use tonka paste?
With its viscous consistency, measuring out our tonka paste is much easier than grating ingredients like nutmeg. The rice syrup-based paste helps preserve the fine fragrance and delicious flavour of the tonka bean, without losing its aroma. One tablespoon of tonka paste is enough for around 250 g of dough or cream.
Tip: knead the tube well before use.
