But sometimes you’d rather avoid animal-based gelatine as it doesn’t suit your diet or for health-related or ethical reasons. Our agar is the perfect alternative!
What is agar?
Agar is a 100% plant-based gelling agent obtained from blue or red algae. The agarose it contains makes it set. Although agar is obtained from algae, in the cooled dish, it’s completely colourless, with a neutral odour and taste.
And how do you use agar?
As a gelling agent, agar is usually up to ten times stronger than gelatine. This means converting recipes and measuring the right amount can be tricky. Not with our agar leaves!
These make recipe conversion easy: two agar leaves = six gelatine leaves. So you can whip up cheesecakes, desserts and much more in a few easy steps – without using animal gelatine.
